Cheese Sticks

Pair with Grgich Hills Estate Fumé Blanc; Serves 6-8

  • 1 1/2 cups flour
  • 3 rounded teaspoons baking powder
  • 4-6 ounces grated cheese (ie. Fontina, Monterey Jack)
  • 1/2 cup unsalted butter (very cold or frozen)
  • 1 large egg
  • Parmesan cheese
  • Milk

Preparation: (about 20 minutes)

  1. Using a food processor, grate cheese and set aside.
  2. Mix flour and baking powder together on pulse.
  3. Add butter (very cold) in pieces and pulse on and off until coarse.
  4. Add grated cheese and pulse on and off until barely mixed.
  5. Add egg and pulse until a ball forms.
  6. Roll dough 1/4 ” thick into a 12 ” x 17 ” rectangle and cut into 1/2 ” x 5 ” length.
  7. Place cheese sticks on an ungreased cookie sheet and lightly brush with milk.
  8. Sprinkle with Parmesan cheese.
  9. Bake at 350 degrees for 10-15 minutes.
