Cesar SaladGrilled Hearts Of Romaine
With Caesar Dressing, Blue Cheese And Olive

Pair with Grgich Hills Chardonnay

Caesar dressing:

  • 1 (2 ounce) can anchovies
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon red wine vinegar
  • 1⁄2 teaspoon pepper
  • 1 egg yolk
  • 1⁄2 cup olive oil

 

Use a fork to mash the anchovies and garlic in a mixing bowl to a paste. Add the lemon juice, Worcestershire, vinegar, egg yolk and pepper and slowly whisk in the
olive oil.

To finish salad:

  • 3 heads organic Romaine lettuce
  • 1⁄4 cup olive oil
  • 1⁄2 cup crumbled gorgonzola cheese
  • 1⁄4 cup small black olives such as Nicoise
  • 1⁄2 cup grated Romano cheese
